Those who want to save money and improve their diets should look for recipes that use fresh, whole ingredients and that combine protein with healthy carbohydrates.

Spuds and onions cooked in a simple cream sauce is easy enough for a simple meal, but indulgent enough for any dinner table. It’s versatile too – have on its own, perhaps with some salad, or use as a side dish to impress company!


  • Melted butter, to grease
  • 250ml (1 cup) pouring cream
  • 125ml (1/2 cup) milk
  • 1 small brown onion, thinly sliced into rings
  • 1kg brushed potatoes, peeled, thinly sliced
  • 80g (1 cup) coarsely
  • grated cheddar

Step 1

Preheat your oven to 180ºC. Brush your baking dish 1.75L (7-cup) capacity with melted butter. Place the onion, cream and milk in a saucepan over medium heat and cook for until almost boiling or up to 4 minutes. Remove from heat. Use salt and pepper to season. Set aside for 10 minutes to cool slightly. Transfer the onion to a plate.

Step 2

Place one-third of the potato, overlapping, covering the bottom of your dish. Top with one-third of the onion and one-third of the grated cheddar. Repeat twice with remaining potato, onion and cheddar, using about a third each time.

Step 3

Pour the cream mixture over the dish. Place dish on a baking tray, and bake for 60 minutes or until potato is tender and top is crisp and golden. Set the dish aside for 10 minutes to cool slightly before serving.

Top Tip

Add in some rosemary or whatever other herbs you have handy to add flavour to taste. You can also top with breadcrumbs before popping in the oven for a crunchier finish.
